2020 DSM Restaurant Week Best Egg Appetizer Winner
Urbandale, Iowa (September 22, 2020) - Iowa Egg Council is excited to announce Vino209 Wine Bar & Bistro in West Des Moines, Iowa is the 2020 DSM Restaurant Week winner of the Best Egg Appetizer! Their winning dish was the Bacon & Egg Salad - 63° egg, candied pork belly, pecorino meringue, basil macerated peaches, savory sabyon, smoked egg yolk, everything spice crostini. Restaurant goers were encouraged to visit Iowaegg.org to place their vote for their favorite egg appetizer.
Iowa Egg Council Executive Director Kevin Stiles said, "We are pleased to partner with local restaurants during DSM Restaurant Week. During these unprecedented times it is important for us to support local businesses."
Kelly & Denny Sharp are the owners of Vino209 Wine Bar & Bistro. Kelly previously owned and operated Heart of Iowa Market Place in Historic Valley Junction for 8 years. Her love for the district and desire to see it continue to grow and draw visitors led her and her husband to develop this exciting new Wine Bar & Bistro concept, which she felt was a missing element in the restaurant offerings in the area.
Kelly Sharp said, "As the owner of a small local restaurant we are always thrilled to participate in the DSM Restaurant Week, which is a great way to showcase our talented culinary team. The contests this year allowed our Chef and Culinary team to be really creative and push the envelope in terms of creativity, taste and the use of local fresh ingredients. Andrew Phelps, Executive Chef of Vino209, relies equally upon his childhood memories of family meals and gatherings, along with his professional kitchen experience to create his European inspired menu at Vino209. Classically trained and taught in Denver, Colorado's hotel and fine dining scene, Andrew applies those techniques to the flavors he loved and appreciated as a child. The remarkably fresh ingredients Iowa has to offer has allowed him to showcase his talents offering a wide selection of European inspired dishes that complement Vino209's evolving and diversified wine menu.
When asked how they feel about winning the "Best Egg Appetizer" Phelps said, "Our culinary team was very excited to hear Vino209 had won! We were thrilled about the opportunity to participate and support the Iowa egg industry." Phelps included how he came up with the idea for the Bacon and Egg Salad. He said, "The dish we created was designed to show the versatility that eggs have to offer in so many different applications. Ultimately, our dish highlighted eggs in four unique ways."
You may wonder "what is a 63 degree egg." The 63 degree egg is an egg cooked in it's shell in water that is held at 63 degrees Celsius for 45 minutes; this process results in the whites being cooked and the yolk becoming a velvety texture - it is similar to a poached egg but the yolk is much more luxurious. The dish was accompanied with smoked-cured egg yolks, a curry sabayon (egg emulsion similar to hollandaise) and toasted meringue made with Pecorino cheese.
Phelps included, "Restaurant week is always one of our favorite times of the year. With 2020 offering so many challenges we were so happy to be able to participate and see so many in our community supporting us."
